Ginger Date Dressing

This dressing combines a good punch of ginger with the sweet creaminess of Medjool dates and goes well with salty salad toppings such as Kalamata olives. It also serves as a fantastic dipping sauce for your favorite vegetables like red peppers or carrots.

16 Medjool dates, pitted

¾ cup filtered water

⅓ cup extra virgin olive oil

2 Tbsp fresh lemon juice

1 Tbsp Coconut Aminos

1-inch piece ginger, peeled

½ clove garlic

Pinch ground cumin

Pinch salt

Yield: 1½ cups

Freshness: 1 week in the fridge

1. Soak the dates in the ¾ cup water for 10 minutes to soften them. Keep the soaking water.

2. Place the dates and their soaking water with the remaining ingredients in a blender and blend until smooth.
